raspberry white chocolate muffins



muffins are *so* underrated. easy dump it all in batters, soft moist cakey texture, and although they taste like a dessert, people don't judge you for eating them for breakfast! these are just fab.

raspberry white chocolate muffins
recipe from recipezaar

1 cup milk
1/2 cup butter, melted
1 egg
2 cups flour
1/3 cup sugar
1 tablespoon baking powder
1 teaspoon salt
1 cup fresh or frozen raspberries, unthawed
1/2 cup vanilla chips or shaved white chocolate

topping:
1/4 cup butter, melted
1/4 cup sugar

Grease 12 muffin tin cups or use paper liners. Heat oven to 350°. In a large bowl mix the milk, butter and egg.
Stir in all remaining muffin ingredients except raspberries & vanilla chips.
Stir only until flour is moistened,then gently stir in the berries & vanilla chips.
Spoon the batter into the greased muffin tins.
Bake for 23-25 minutes or until golden brown.
Let muffins cool a little, then remove from pan.
Dip top of each muffin top in melted butter, then in sugar.

*i used a frozen three-berry mix and grated white chocolate. super fab. i would like to try next time with a half grated white chocolate/half white chocolate chip mix.

homemade cherry garcia ice cream


here's what you do when you live three hours from a store that stocks ben and jerry's. ya make your own. here's my take on cherry garcia: the addition of finely chopped pecans and chocolate chips makes this ice cream so spectacular.

homemade cherry garcia ice cream

2 cups heavy cream
1 cup milk
3/4 cup sugar
1 Tablespoon vanilla
2 cups fresh sweet cherries, pitted, chopped
10 drops red food coloring
1/2 cup milk chocolate chips
1/2 cup pecans, finely chopped

Combine cream, milk and sugar. Mix until sugar is dissolved. Stir in vanilla and cherries. Chill for one hour before freezing in ice cream freezer. Pour into ice cream freezer and churn about 20 minutes total, adding chocolate chips and nuts after about 10 minutes, after ice cream has enough bulk to float the toppings without them sinking to the bottom. Put into a storage container and freeze (bloom) for at least 2 hours or overnight.

*next time i'm going to try adding cherry flavoring. try marachino cherries or cherry pie filling if you can't get fresh cherries.
