gooey butter cakes



gooey butter cakes is a dessert from the butter queen herself, Paula Deen. it is more like a bar dessert than a cake. it is really rich- (cheesecake rich-) but has a really yummy flavor and a great chewy texture. i liked it best served with a handful of fresh raspberries to cut the sweetness. very yum. a keeper.

1 box yellow cake mix
1 egg
1 stick butter, melted

filling

1 (8-ounce) package cream cheese, softened
2 eggs
1 teaspoon pure vanilla extract
1 (16-ounce) box confectioners' sugar (about 4 cups.)
1 stick butter, melted

Preheat oven to 350 degrees. Lightly grease a 13x9x2-inch baking pan.
In the bowl of an electric mixer, combine cake mix, egg, and butter and mix well. Pat into the bottom of prepared pan and set aside.

Still using an electric mixer, beat cream cheese until smooth; add eggs and vanilla. Dump in confectioners' sugar and beat well. Reduce speed of mixer and slowly pour in butter. Mix well. Pour filling onto cake mixture and spread evenly.

Bake for 40 to 50 minutes. Don't be afraid to make a judgment call on the cooking time, because oven temperatures can vary. You want the center to be a little gooey, so don't bake it past that point! Remove from oven and allow to cool completely. Cut into squares.

  2. i have a recipe almost exactly like this but the filling has coconut and almonds. just looking at the pic is making my nouth water. its one of those things i can only make if i bring it somewhere cuz i will seriously eat the WHOLE pan!

  3. chanda that is hilarious. i'll bet i am carrying around a few lbs from some of my faves. i can see the addiction from these. yum. and ro, i am going to NEED that recipe! that sounds sooo sooo good to add the coconut and almonds. i know people do tons of variations of these- they are a fave at p.d.'s restaurant. i've heard these made with a strawberry cake mix is really good. o wow. i want to make them again. watch out, fatness here i come.

  6. ok so my recipe is exactly the same for the cake, but for the filling you subtract the butter and add in 1/2c coconut and 1/2c chopped nuts and slowly mix them in. cook at 325 for 40-45min. my mom sometimes just sprinkles the nuts on top and i'm an almond lover so thats what i usually use, but any will do.

  7. thx ro! ya, i'm pretty sure i'm going to do that- and leave the butter as IS. i loved them so much like this~ they can only get yummier with more butter, some coconut and almonds. i love the almonds idea. almonds are under-used. (mind churning.) as soon as my love handles recover from the last batch, i'm going to be making that!

  9. When I was a kid, we would go to my Aunt & Uncle's cabin during the summer. My Aunt Nancy would make this for us every time we visited. I think it was my favorite part of the trip! She called them Cheesecake Bars. I can't believe I found this recipe here......the last time I had these was in the early 80's! Gotta go, have to go bake a batch! Thanks for posting this!
