german peach pancakes with warm peach butter sauce


german peach pancakes came from my favorite peach farmer's wife, my sil shelley. she is a great cook (and great friend,) and she knows peaches. she bottles 100 quarts of them every summer. you better believe she's got some great recipes to use them! this recipe is a new favorite at our house. you basically throw everything in the blender and toss it in the oven. i love this recipe so much i worked to create the perfect peach sauce to top it off. the warm peach butter sauce is so delish and begs for a spoonful of whipped cream. it's like having peaches and cream, peach cobbler, and pancakes rolled into one breakfast. amazing.

6 eggs
1 cup flour
1 cup milk
1/4 teaspoon salt
1/4 cup butter
2 quarts peaches, drained

preheat oven to 425 degrees. melt butter in a 9x13" pan. combine eggs, flour, milk and salt in the blender. pour peaches over melted butter. pour blended batter over peaches and butter. cook 25-35 minutes, until golden brown. serve warm with peach butter sauce and whipped cream!

1 pint peaches
1/4 cup sugar
3 Tablespoons butter
1/8 teaspoon salt
1/2 teaspoon vanilla

melt butter in a small saucepan. blend peaches in blender and add into butter. add sugar and salt. stir and bring to a boil. simmer until sauce thickens. stir in vanilla. serve warm with whipped cream.

*i also make a fresh peach pancake topping by combining peaches, sugar and a dash salt in the blender. blend until smooth and serve over whole wheat pancakes.

*german peach pancakes are great for breakfast for dinner with some fresh fruit, oj, scrambled eggs and tons of crisp bacon!
