puffy pita pockets



these are yummy and hearty with a bit of whole wheat flour.
i love these for a veggie sandwich: tomato, cucumber, sprouts, olives, lots of avocado, a handful of sprouts and mayo!

recipe from the bosch store, adapted by rachelle

2 cups warm water
1 Tablespoon honey
2 teaspoons salt
2 cups whole wheat flour
3 cups white flour
2 Tablespoons yeast

mix thoroughly in the bowl of a stand mixer or bosch. add a little more or less flour as needed. dough should be soft, but not sticky. knead for 8 minutes in the machine, until the dough is smooth and elastic.
divide dough into 12 pieces. roll into 1/4"-1/8" thick circles on a WELL floured surface. (any creases in the dough will cause the pita to stick together and not form a pocket.)
cover with plastic wrap and let rest 30 minutes. (make sure they are well floured so they don't stick.)
bake at 475 degrees in a preheated oven for 3 minutes. watch them carefully. remove from oven when pita puffs up and is slightly golden. place in a plastic bag to soften and flatten.

*i bake them on parchment on a pizza stone or right on the pizza stone, using a paddle to move them in and out. if you don't have a pizza stone, bake them on parchment on a cookie sheet, or just on the cookie sheet.
