martha's tomato soup



this is a super simple recipe for tomato soup. i like it because it calls on pantry staples: bottled tomatoes, onions, butter. (a food storage recipe.) it's a simple comfort food and a quick fix for dinner. this is the recipe for the martha stewart tomato soup you can buy at costco. i added a teaspoon of sugar and a little cream. (cream is how i made the little heart in the soup. see below.)
so classic with grilled cheese, yummy with cheesy garlic bread too. gotta love that martha!

6 tablespoons butter
2 medium onions, chopped
2 cloves garlic, chopped
24 ounces canned whole tomatoes
3 cups homemade or low-sodium store-bought chicken stock
2 teaspoons sea salt
1/4 teaspoon freshly ground black pepper

Melt butter in a large saucepan over medium-low heat. Add onion and garlic; cook, stirring, until onions have softened, about 15 minutes.

Add tomatoes, chicken stock, salt, and pepper; bring to a boil. Reduce heat to low and cook until tomatoes, onions, and garlic are soft, 10 to 20 minutes.

Working in batches, transfer soup to the jar of a blender and puree until smooth. Return to saucepan and place over medium heat. Cook until soup is heated through. If soup seems too thick, stir in some extra stock to thin. Serve immediately.

*to make a heart in your soup, spoon cream over soup in a heart shape. trace the heart over and over with a spoon. you may need to add one more spoonful of cream.
